A couple weeks ago I started having a craving for meatballs. Like, an epic craving.
After doing an impressive amount of research I settled on this recipe from Jennie's Kitchen and ohmygod it's so good. Even non-veggies were confounded at how delicious these are. No carrot bits, no beets, no corn chunks...just straight-up faux meatball like the real thing. I served them with a homemade red sauce over pasta, but Sprouted Kitchen likes her with lemon pesto. They are also good reheated as a meatball sub!
Today I made a triple batch so I can get this meatball thing out of my system all week.
